Sponge gourd, also known as luffa, has both edible and functional qualities. Sponge gourd can be prepared and consumed. The texture is similar to that of zucchini, if harvested before it reaches full maturity. However, we recommend cooking sponge gourd in to a soup, rather than on the grill. When harvested at full maturity, sponge gourd also becomes a functional item known as “luffa”.
